Why does the ingredient matter?
Volume-to-weight depends on density: a cup of flour is about 125 g but a cup of sugar is about 200 g. Picking the ingredient gives the right conversion.
Which cup size is used?
The US legal cup of 240 ml. Tablespoons are 15 ml and teaspoons 5 ml.
How accurate is it?
Close enough for cooking, but densities vary with how tightly you pack flour or sugar. For precision baking, weigh ingredients on a scale.
